I’m sharing 5 weeknight clean eating recipes that are on repeat in our house and the whole family loves!

While we love our special treats and gourmet meals at the Harney house, every day, we try to focus on eating whole foods, fresh produce, and quality protein. But unless I do a little planning (ie easy meal planning for busy moms), getting healthy recipes on the table every night can be a challenge with our busy schedules.

It can be tempting to order takeout to prepare a home-cooked meal when we’re at work, school, and dancing (for long hours!), but I know we all feel better when we have a nutritious home-cooked meal at the end of the day.

Today I’m sharing a handful of easy to make yet delicious clean eating recipes that you can whip up quickly for busy nights – enjoy!

5 Clean Eating Recipes for Nights of the Week

1. Easy Rotisserie Chicken Enchiladas

These easy roast chicken enchiladas are perfect for meal prep and always a family favorite! It always shocks me how delicious they look that take so little time to make with so few ingredients. 2. Roll sushi in a bowl

This is one of our dinners: baked salmon, rice (seasoned with rice vinegar and sesame seeds), chopped cucumber, avocado and seaweed snack. Top with soy sauce and/or sriracha and feast! Tip: make the rice in the Instant Pot for convenience.

3. Dairy-free & gluten-free tuna casserole

This healthy tuna casserole is gluten-free, dairy-free, and high in protein! It’s a perfect family and kid-friendly dinner for a busy week. Made with staples like olive oil, Dijon mustard, minced garlic, and tuna (to name a few), this casserole is a great dinner option. Even better, in just over 20 minutes, it’s all done!

4. Slow Cooker Greek Chicken Soup

Soup is an easy recipe that you can throw together in the slow cooker. Liv loves soup (this is her all-time favorite) and it’s an easy way for the family to get in a ton of veggies.

5. Sriracha Chicken and Cauliflower Stir Fry

This chicken and cauliflower sriracha stir fry is the perfect healthy option for dinner or lunch. It is high in protein, gluten free, dairy free and family friendly. Save the extras as a lunch or enjoy as part of your weekly meal prep.

6. Gluten-free cashew chicken

I love Chinese takeout, but I really don’t like how it leaves me afterwards. It makes me feel quite bloated and makes me bloated. Fried food really doesn’t love me as much as I do, so I try to avoid it as much as I can. BUT, this cashew chicken fills me with the warm vibes that Chinese takeout brings, without the yucky feeling afterwards! This is a definite go-to when I’m craving a tasty meal at home!

7. Jackfruit Carnitas Burrito Bowl

I originally made this as a lunch idea, but I’d be lying if I said I didn’t love it when I was craving a light dinner. It’s one of my favorite lunches or dinners after a hot day. It’s healthy, vegan-friendly, and most of all, delicious! If you want to add a little extra, you can even add some olives, cilantro or even corn. Don’t be discouraged if you’ve never tried jackfruit, you can flavor it however you like!

8. Non-fried chicken

I love this crispy, salty and incredibly delicious chicken that is not a friend, made in a sheet pan. It’s healthy, easy to make and tastes just right. I live for delicious foods that won’t clog my arteries or make me feel crappy. Pair this unfriendly chicken with a fresh, nutritious salad and you have a healthy evening meal.

9. Chicken with Mediterranean cauliflower rice

Talk about delicious! This incredibly flavorful, protein-packed, low-carb dinner is definitely my favorite. Even the kids go down this super healthy meal with all the goodness in it. You can even throw in some baked sweet potatoes to amp it up if you have a hungry husband at home.

10. Chicken tacos with homemade tortillas

I’ll be the first to say I’m a bit of a #tortillasnob. That’s why I almost always resort to making my own, like in this recipe. This healthy meal is so easy and definitely worth the great taste. Just make your tortillas, pack them with your favorite fillings (we did cilantro, mashed black beans, shredded chicken, spinach, salsa, sour cream and cheese). Oh, now I’m craving them again!
