Hi friends! I hope you had a wonderful weekend and you are doing okay. After spending a little time at the end of last week, I relax back to the swing of things here on the blog. Writing here was always a bright spot for me and I hope it is a bright spot for you. <3

It is impossible to ignore the gravity of recent events: the loss of Charlie Kirk, the tragedy of school purposes, the woman who was killed in public transport, and the memory of September 11th. There were many. If you feel sad or gravity, please know that I see you, I feel it too, and I send you a big hug through the screen.

In the spirit of focusing on some of the simple joys, I wanted to share something a little lighter today: easy and healthy Airbnb recipes. I wanted to post this since we got behind Spain and now we’re in September. There is no time as the present 😉

Why do we cook in Airbnbs while traveling

When we travel, we learned that food for every meal just doesn’t work for us. It gets expensive fast, restaurant meals can be heavy and kids don’t just love sitting on a table three times a day.

What works best for us: Eating out for a big meal a day (usually lunch or dinner) and enjoying quickly bites out, or making our other meals simple and fresh on Airbnb. Not only is it budget -friendly, but it also feels fun to shop for local markets, enjoying regional specialties and concentrating on a casual family dinner. Also, the restaurants and cafés we dine are awesome. It is best to enjoy a bigger, amazing meal of a beam of mediocre seats all day long.

During our trip to Spain, some of my favorite memories were cooked with my friend Sam. He would do a plate or two, do something on Airbnb and walk it and the kids would run, while sharing good food, good wine and good company. This is what the holiday meals should feel! We look forward to our family dinners and once they live there, they should not feel that they had to feed all of us or go out to restaurants many times every week. We shared the cooking and cleaning load and it was awesome.

Airbnb Grocery List List

When we check on an Airbnb, I almost always grab these staples:

Granola or cereals

Yoghurt

Almond milk (or other choice of selection)

Coffee (Instant Decaf in Spain was 2 euros and tested heavens)

Water and sparkling waters

Fresh berries and seasonal fruits

Eggs

Bread

Nutella or jam (because children)

Protein (Rotisserie chicken, canned tone or sardines, Spanish tortilla etc.)

Snacking veggies (peppers, cucumber, carrots)

Guacamole + Hummus

Snack bar

Supplements: I always bring my own Daily diet powder + vitamins with me

Easy morning ideas Airbnb

Yogurt Parfaits with Granola + Berries

Eggs and toast with fruit

Protein pudding with berries

Spanish tortilla (homemade or prefabricated by a local market)

Casserole eggs (great if you stay in a place for a week or more)

Quick lunch and Airbnb dinner recipes

These meals come along with minimal preparation and local ingredients:

Rotisserie chicken enchiladas

Large salad cups with greens, vegetables, beans or tuna, olive oil and lemon

Charcuterie -type dinner with local cheeses, meats, olives, bread and vegetables

Simple night pasta: pasta, olive oil, garlic (or garlic garlic), seasonal vegetables and proteins such as shrimp or chicken

Grill protein + vegetables (if Airbnb has an external grill)

Chopped Greek salad (cucumbers, pepper, onions, olives, artichokes, tomatoes, feta, herbs such as mint and rosemary, chicken and lemon vinaigrette)

Healthy snacks and Happy Hour ideas

We love a snack break in the afternoon or a happy time:

Fresh fruit + cheese

Guacamole and Hummus with shredded vegetables + crackers

Olives + nuts

Chips with salsa

Wine or foam mocktails

Journey should not mean blowing your budget or feeling sluggish after too many heavy meals. With a quick grocery trip and some simple recipes, you can enjoy healthy, delicious meals just on your Airbnb.

I think there is something so special about gathering around the table with your family or friends and you share food you have prepared together. It makes the journey much more unforgettable.
