How to grill artichokes
Artichokes are one of the first foods the pilot and I would make to accompany our dinners. When we first started dating, money was tight, so instead of going out to eat, we shared an ahi tuna steak and cooked two artichoke hearts as our great dinner at home. The pilot is kind of the artichoke king and over time, he shared the method to cook them perfectly. They may seem like an intimidating vegetable—they’re covered in battle spears for goodness sake—but they’re a simply prepared and nutrient-dense side.

How to prepare artichokes
Artichokes need a little scrubbing before cooking. You will pull the artichoke leaves, cut off the top and stem, and remove the chocks.
After cutting, place the artichokes in a bowl of cold water with a squeeze of lemon juice to prevent them from turning black. You can also rub lemon juice on the cut areas of each artichoke, but I find it much easier to soak them in lemon water.
Now it’s time to cook them!
How to cook artichokes
You will boil the artichokes for 20-30 minutes or until they are soft. Alternatively, you can steam the artichokes for 20 minutes. Check to see if they are done by piercing the stem of one with a fork to see if it goes through easily.
Once they’re done, you’ll have the choice of either eating them as is, sprinkled with salt and pepper, or grilling them cut side down. Lightly charred grilled artichokes are delicious! Either way, they will be amazing with the dip of your choice (see the options in the recipe below).
Artichoke Dipping Sauce
There are many flavorful sauces that go great with artichokes. My favorites are:
- Melted butter with chives
- Dressing up the goddess
- Mayonnaise with a squeeze of lemon
- Sriracha Yogurt Lemon Sauce (1 container plain yogurt, 1-2 tablespoons sriracha and a squeeze of lemon juice)
Amazing artichokes
- 2 artichokes
- 2 lemon Tree
- 1 Laurel
- Sea salt
- olive oil
- garlic (optional)
- dipping sauces (ideas to follow)
- Cut off the top of the chuck and also about 1/2 inch to one inch from the stem. Pull off any outer leaves that look bruised or scarred.
- Place the artichokes in a bowl of cold water with a squeeze of lemon juice to prevent them from browning.
- Bring a large pot of water to a boil.
- Add half a lemon, a bay leaf and 1/2 teaspoon salt.
- Put the artichokes in the pot, cover them and let them boil for 20-30 minutes, depending on the size. Make sure all parts of the artichoke are cooked, so this may mean a good stir from time to time.
- To check if the artichoke is ready, remove from the boiling water and gently pierce the stem with a fork. If it passes easily, you are GTG. Any resistance, and the artichoke returns to the pot for 5 minutes before checking again.
- After the artichoke is fully cooked, you can stop here and prepare the dipping sauce. If you’ve preheated the grill, you can take it to the extreme by removing the artichokes, gently patting dry and cutting in half before brushing with a light brush of olive oil or butter.
- Grill over high heat for about 5 minutes (until well charred) and sprinkle with sea salt.
